Hoppy and poppy
The Stillery’s Ouwe is our spirit of choice to pair with a range of hoppy craft beers. In the Netherlands, we like to drink our beer with a “kopstootje”. This typically is a tulip glass or elegant shot glass filled to the brim with Genever. We don’t shoot, we nip and enjoy, it’s a tradition. The Stillery’s Ouwe is distilled with Citra & Amarillo hops. These hops pair really well with the more hoppy pale ales out there.
From grain to glass
Here at The Stillery, we do everything from grain-to-glass. We start with the real stuff, the malted grain. This gives us a lot of control in the distillation process. To make a malt wine out of spelt grain, first we mash the grains. Secondly, we feed it to the yeast beasts in our fermenters. Then, after two weeks, the yeast is done and the mash is ready to be distilled. Once distilled, we redistill the malt wine together with all the botanicals. But we’re not done yet…
