Introducing The Stillery's Chateau de Vie, a four part limited edition series of vintage eau de vie distilled from different batches of grape pomace. Aged for 1 to 4 years on select sherry, bourbon and wine barrels, Chateau de Vie is similar to grappa in many ways. These fine spirits are distilled from the seeds, stems and skins of different grape species left over from the production of wine at the urban winery of Chateau in Amsterdam. The Chateau de Vie limited edition collection is limited to 500 bottles per vintage. Savor its distinct taste, and enjoy a delicious drink that is perfect for special occasions.
When we dig into the history of The Stillery’s Chateau de Vie, it’s important to first get familiar with the Italian aperitivo by the name of grappa. Grappa is a zero waste, circular distillate. The spirit is Made from the skins, seeds and stems of grapes otherwise known as pomace. These are the leftovers from the production of wine. After the pressing of the grapes for winemaking, the pomace is fermented and distilled to create grappa. Most grappa is clear and unaged although aged grappas are getting increasingly popular.
Grappa is thought to have been invented in the Alps region of north-eastern Italy during the reign of the Roman Empire. Nowadays European law dictates the spirit must come from either Italy, San Marino or Switzerland. That is not to say that other European winemaking countries don’t also produce spirits made from the leftovers from their winemaking. In France the resulting “Eau de vie” goes by the name of “Marc”. In Portugal it’s called “Bagaço”. Ever since Amsterdam has its own Urban Winery by the name “Chateau Amsterdam”, The Stillery has been preparing to make its own version of the Pomace Brandy by the name of The Stillery’s “Chateau de Vie”. And here we are with 4 different vintage limited editions.
The kick-starter of this limited edition series is the Chateau de Vie 2018 Vintage. Just like grappa, this is a drink made of grape skins, stems and seeds, otherwise known as pomace. After Chateau Amsterdam pressed their Montepulciano grapes we came into play. We brought the pomace to our distillery after which we left it to ferment for two weeks.
After we distilled the pomace it was ready for the barrel. We have barrel aged our Chateau de Vie subsequently on a new oak wine barrel a sherry cask and a bourbon cask. In total, the spirit spend 4 years to get its auburn hue. The result is an intense, complex spirit with a smooth mouthfeel and a long finish. This drink is perfect for sipping neat.
With its fiery amber hue, the Chateau de Vie 2019 vintage looks as good as it tastes. An eau de vie made of Macabeo grapes, distilled to perfection and barrel-aged for 3 years, Just like grappa, Chateau de Vie is the kind of drink that warms you from the inside out.

Like champagne, this unique spirit is made from a blend of Pinot Noir and Chardonnay grapes, then barrel-aged for two years to perfection. The result is an incomparable spirit with a smooth, rich flavor that is perfect for sipping neat or enjoying in your favorite brandy cocktails.

Our Chateau de Vie 2021 is a truly unique spirit, distilled from Riesling and Chardonnay grapes and barrel-aged for 1 year. Its taste will remind you of grappa and that is exactly what we would call it if our distillery was based in Italy, San Marino or Switzerland.
This eau de vie has a beautiful golden color, and its aroma is that of ripe stone fruits with a hint of oak. On the palate, it is smooth and silky, with flavors of figs, apricot, and vanilla. The finish is long and lingering, with just a touch of warmth.
