Spelt grain
The Stillery’s vodka is made from local spelt grain. This type of grain has been around since the beginning of time. Spelt grain has a much lower starch content than wheat or barley. Therefore it has a lower yield in fermentation and will yield less alcohol after distillation. However, what spelt grain lacks in yield, it makes up for in flavor. The Spelt grain is what gives the Stillery’s vodka its amazing taste. Its rich almond-like roundness and its buttery, white chocolate-like mouth feel are what make this vodka so good.
From grain to glass
The Stillery’s grain-to-glass approach gives us a lot of control in the distillation process. Firstly the process starts with shredding the grain so it breaks. Secondly, the grain is mixed with water and mashed to a pulp. The sweet mash is then fed to an army of tiny yeast workers and left to ferment. Yeast has a real sweet tooth and in roughly 2 weeks all the sugar is turned into alcohol. To conclude the process we distill, blend and filter on active charcoal.
